Abstract: Annually, almost 50% of the global horticultural production is lost or wasted. One third of all fruits and vegetables produced are never consumed by humans, with postharvest loss estimated to be more than one billion tons per year. In lesser- developed countries such as Fiji, postharvest horticultural loss has elevated significance undermining national food security and contributing to disproportionate socio-economic impact.
